What cake / pudding / mincemeat recipes do you use and why?

Any low-fat or nut-free recipes? [ducks head beneath parapet aware that fat-free flies in face of Christmas spirit!] All I've found exclude alcohol too and that's not right...

Delia Smith ones because her recipes always come out lovely. I have some christmas puddings steaming at the moment, used her recipe for them. I've made my mincemeat too and used her recipe.

My gran's cake recipe (ooh, must 'feed' it today - thanks for the reminder!)

don't really like puddings or mincemeat, so shop bought if anyone else wants them.

My Nana's cake, which has no alcohol in it.

Figgy pudding with port, did this last year and everyone loved it so much more than Christmas pudding that it's my new tradition.

This year I'm going to be working on mincemeat recipes so am trawling the internet for the varieties.

goblinqueen - at risk of sounding stupid I thought figgy pudding was christmas pudding - what is the difference pray tell?

Figgy pudding is just fig pudding, christmas pudding is fruit pudding
