I want to make Nigella's Yule Log. I have made it before but only just ahead of eating. This year I want to make it now & freeze until needed. Do I ice & roll it, ready to go, before freezing? Her instructions suggest this but don't make it explicit 
She says: freeze for up to 3 months. Thaw overnight & store jn airtight container until needed
