YY to 'the roast without meat'
DH and I are vegetarian, we have a Quorn Roast (he isn't a huge fan) but all the accompaniments is what make Christmas Dinner special.
The DC have a chicken breast, roasted in skin.
If I have visitors, I do a whole chicken.
Something like pasta or bakes is nice for another day.
Christmas Day, maybe buy a ready made nut cutlet and ask if they want it. Chances are, they'll have the sides.
I used to make a Nut Loaf (Good Housekeeping) for my Mum when she couldn't eat dairy.
Fry onions + oil+ garlic until soft but still pale
Slightly toast some white nuts- almonds, macadamia. brazils,cashews then coarsley crush
White bread into breadcrumbs
Cooked chestnuts (canned or vacuum packed) drained artichokes hearts - chopped.
Then add thyme , pine nuts, grated cheese if you want, an egg.
Form into a roll and wrap in greaseproof then foil,
Freeze till you need it, bake from frozen, wrapped up until it's done then open to let it brown.
I'll check how long it cooks for, think it's 40 minutes.
