Christmas stuffing recipes

Anyone got any good recipes for stuffing? I was thinking of doing sausagemeat and oatmeal. Any ideas will be appreciated!!

Sorry - I commit the cardinal sin of getting a box of paxo sage'n'onion or the frozen stuffing balls...
I make every other jeffing thing from scratch, so I cheat and get frozen or instant stuffing and yorkshires.

and I use instant gravy as well

I really don't like paxo or believe that's exactly what I would be using!

cheesy, bought sausagemeat is usually a bit disappointing. If you buy some good quality sausages and remove their skins, they will be much better. You just break up the meat and add other ingredients. You might need to be careful not to add much extra seasoning or herbs as the sausages will have these already.

Sausage meat mixed with prunes, apricots, dired cranberries, a bramley apple, breadcrumbs and an egg...pretty hard to beat.

I use sausage meat and Shropshire spice company mix. Every year I think of making my own from scratch, but never do.

I do a pack of chestnuts roughly chopped
1/2 an onion
1/2 lb sausage meat
6 oz of breadcrumbs
an egg
and a few splashs of stock

mix it all together and stuff your bird

easy peasy and very yummy
