gingerbread house

How long can these gingerbread houses sit, made up, on the side?

DD is keen to get on and assemble hers, it's a rainy sunday afternoon, got a busy week ahead. I'm thinking it'd be nice for her to do it and we can have it out in the kitchen. But I don't want it to be soft/stale by xmas.

I haven't made up mine yet, it will either be eaten the same/next day or used as decoration and then thrown away.

Ours is usually up for about 3 weeks, with all of us picking sweets off the roof. The actual gingerbread is a bit dry by the time we actually dismantle it, but still edible (probably best crumbled up and used as a cheesecake base or something similar).
