Very quick cake question.

I have just put my cake in the oven - I use The Blessed Saint Delia's recipe, and it has never let me down. This time, though, I haven't put a collar of brown paper round it to protect it during the long cooking time.

Will it be OK, or should I go and get it out, and put its collar on?

Arghhh - I am torn now. My FB friend says no collar, it will be fine (I did double line the tin) and you say collar.

I use this recipe too, always amazing, always use a collar, so PUT THE COLLAR ON, why risk burning the sides?!

I've never done one without, but I think you might overdo the 'crust'.

If you friend finds it ok and doesn't do a collar then I would go on her experience!

I put the collar on for the last couple of hours, and the cake seems to have come out the same as it did in previous years, so I think it will be OK - especially when generously fed with brandy!!
