Homemade baileys

Decided to give it a go this year. Anyone have any good recipes or tips?

Also can I use scotch instead of Irish whiskey? I've got lots of that already. don't hurt me whiskey lovers!

I had a quick google and it appears very simple

This is from the bbc good food site -

Ingredients

  • 250ml/9fl oz single cream
  • 1x 397g/14oz tin condensed milk
  • 350ml/12fl oz Irish whiskey
  • 1 tsp Camp coffee essence
  • 3 tsp chocolate sauce
  • 1 tsp vanilla essence
  • 1 tsp almond essence

Method

  1. Sterilise the bottles for the liqueur: wash in very hot water or on the hot cycle of a dishwasher. Preheat the oven to 160C/325F/Gas 3. Place the bottles on a baking tray and dry in the oven for 10-15 minutes. Leave to cool.
  2. Pour all the ingredients into a blender and blend on high for 30 seconds. Add extra Camp or chocolate to taste.
  3. Pour into sterilised bottles and store in the fridge. (The liqueur will keep for up to two months.) Shake well before using.

So looks simple, but I really don't want to mess it up!

Here's my recipe. Note that these are American measurements.

1c. blended whiskey
1/2 c. rum
1 can sweetened condensed milk (14 ounce)
3 eggs
1 teas. vanilla
2 Tbs. chocolate syrup
1 pint cream

Put in blender and blend well.

Took me a while to find chocolate syrup!

homemade Bailey's is my favourite part of Christmas Blush
my recipe is:
1 tin of condensed milk
1 tub of single cream-long life is fine
1 mug of whiskey
4 tablespoons of camp coffee

mix together and leave in fridge until temptation gets the better of you!

Okay so it's made. It tastes very strongly of whiskey? Not as creamy as I'm used to either. Might add a bit more chocolate syrup and coffee!

I find the cheaper, blended whiskeys work better.

And more - double - cream.
