Nice prep & freeze stuffing recipe?

That's it really, I think I'd like to try making my own stuffing this year but not sure where to start....can anyone recommend a nice, simple recipe that I can freeze?

1/2 lb sausagemeat
1 x pk of chestnuts, chopped up small - I use a pk of ready prepared ones from supermarket, I have bought and roasted my own in the past but thats a faff.
6 oz breadcrumbs
1 x chopped onion
1 x egg
and a bit of beef stock - enough to make it bind together, so maybe 1/4 of a cup.

mix altogether and voila - delicious chestnut stuffing. I put mine in the neck of the bird

I also do similar with minus the chestnuts and with sage

Furball, that's the ones I'm making this afternoon to freeze : ) I'll be adding some fresh sage though, and finely chopped apple as well.

Nigella's gingerbread stuffing freezes well too if you like that sort of thing - 4 out of 6 of my adult guests love it so I'm making it today too.
