Christmas Pudding

I have some fruit left over after making my Christmas cakes and I'd like to try to make some Christmas puddings.

I have the individual pudding basins from Lakeland and plan to give them to a couple of relatives who live on their own.

Could someone link me to a nice recipe please? Smile

I know I have to steam the puddings now and then reheat on the day - does this have to be steaming again or can it be done in the microwave? It just seems like a huge effort for an individual pudding.

I use this as a basic recipe:
6oz finely chopped suet

6oz raisins

6oz sultanas

6oz currants

2oz almonds (chopped)

3oz plain flour

Pinch of salt

1/2 teaspoon ground nutmeg

3oz breadcrumbs

6oz moist brown sugar

3oz chopped candied peel

Grated rind of one lemon

2 eggs

1 small wineglass of brandy, sherry or fruit juice

A little milk.

Sift together all the dry ingredients; beat the eggs and add them and the liquids, Stir for as long as all the wishes take.

However, I replace the 'small wineglass' with a large glass.
I add extra nuts (e.g. this year put brazil nuts and almonds in), sometimes add glace cherries, add a bit of cinnamon.

It works fine to steam on first cook, but to microwave on Christmas day.

This makes 2 Christmas puddings.
