I need an interesting oil and vinegar combination for SIL

We have bought her a nice set of oil and vinegar pourers for Christmas and I want to get some oil and vinegar as well to put in them. I realise I could just get a nice balsamic vinegar and olive oil but I wondered if people could suggest a more interesting combination. I saw an elderflower vinegar online which sounded nice but I wasn't sure what flavour oil to put with it.

Any ideas?

You could make some? Chili or garlic oils are easy to make in sterilized bottles?

I love a really good quality balsamic though, but they ca be pricey. I had one in a hamper and when I went to replace it, the price was 20 euros!

Hugh FW talks about cider apple balsamic vinegar, which sounds nice. Raspberry vinegar would be good. I think a really good olive oil would be hard to beat, and would love you for it. It's more versatile as a base for dressings.

I would stick with plain olive oil and go for a flavoured vinegar, good then for making dressings and the olive oil more versatile, we have bottle of garlic and chilli etc flavoured olive oil that don't get used, whereas plain would be used almost daily.

Thanks everyone, I think I'll go down the route of aninterestingly flavoured vinegar and a good olive oil. Any brand recommendations for the oil?

Oh, I don't know - like the idea of fancy oil but have never bought any! The Ottolenghi shop online seems to do some nice oils.
