Anyone got a nice (and easy) mincemeat recipe?

I made this mincemeat last year... Got the luxury fruit in aldi... Really easy and lovely

just read it again.. i put brandy in mine and just bought the luxury mixed fruit bags rather than separate currants etc as it worked out easier and cheaper. It make loads.. More than forty

I'm not a fan of mincemeat, but this is a really fabulous recipe - it feels "fresher" and less clawy than some mincemeats (and it's v v easy)

250ml medium-dry cider
250g soft dark sugar
1kg of bramley cooking apples - peeled, cored and roughly chopped
5ml of ground cinnamon
5ml of mixed spice
approx 2ml mace
250g sultanas
250g raisins
75g natural glace cherries - chopped (optional)
100g fairly finely chopped blanched almonds (optional)
zest and juice of 1 unwaxed lemon
90ml of Calvados

In a large saucepan dissolve gently the sugar into the cider. Add all the other ingredients to the pan, except the Calvados, and simmer till the apples are soft and pulpy.
Allow mixture to cool down before adding the Calvados.
Can be stored in sterilised jars or used straight away. Once cold can be stored in an airtight container in the fridge for a weekishhhh!!!

I am a crap cook, but mincemeat is incredibly easy. I do the Sarah Raven recipe. I have made it twice and its really lovely. I would imagine that the recipe is google-able, but it is raisins, dates, currants, sultanas, apricots, fresh apple, suet, lemon zest and juice, nutmeg, brown sugar, chopped almonds, mixed spice, ginger and brandy. Just mix together and ket it stand overnight.

Oooohhhhh so much choice! Looking forward to trying them out. Like the idea of the one with cider Poppadom. Think there will have to be lots of tasting sessions
