icing for gingerbread men

Hi all,

What icing is best for decorating gingerbread and can you buy it ready made?

I want it to kind of dry so it's not wet and sticky when it goes into the celophane bags.

I've used the icing pens successfully in the past, let it dry for a bit before putting in the bags, it will probably smoosh if the bag is knocked tho.
