who's got a really great stuffing recipe to share and how soon before xmas day can i make it ?? thanks

I made my stuffing in November and put it in the freezer [smug Xmas Grin]. One is just bog standard sage'n'onion, the other is the chestnut and sage stuffing from here. 'Tis gorgeous.

how long before xmas can you thaw it ?

Hmm, I usually just take mine out on Christmas Eve and put it in the fridge to thaw overnight. I guess you could do it a day earlier, as you'd store sausages in the fridge for a couple of days with no harm, and it's basically just sausage meat.

I've done a tube of sausage meat, 3slices of bread crumbed. Small pack of cranberries, half an onion 3/4 pack of vac pack chestnuts and a handful of sage.
Tell you how it tastes after Christmas.

I made this Chestnut and Cranberry Roll last year and it was really nice.

WAs worried about making it into a roll so made and cooked in a loaf tin lined with baking paper and pancetta. Did this 2 days before Xmas and reheated on Xmas day.

Going to brothers this year, but making this at home and taking with me as my contribution to Xmas dinner.
