Pre heat oven to highest temp, put turkey in and then turn down to required temp.

Cook turkey upside down for the first hour.

I am really crap - it almost got cooked with a plastic bag of giblets in one year .

Steam it! Best turkey i've ever had. Look on Phil Vickery's website.

Cover in lots of gravy when you serve it.

Allow lots of time for resting it when it comes out of the oven.
