Cooking/Preparing Veg in advance

I was going to do our veg on christmas eve, but now looks like I might have to do it tomorrow. Will it be ok just in the fridge for 2 days? It'll just be roasted veg (parboiled and covered in fat ready to roast) and braised red cabbage to reheat.

Mostly worried about the roasties and not done them in advance and in goosefat before so really don't want it to end up cack because its gone funny being left coated for a few days.

I think i'd peel and put in water, changing water a couple time. Sorry one handed due to baby

wouldn't do spuds, leave them till day. i tend to prep veg, cut, wash etc and put in bags in fridge, then cook them early on xmas morning, ready for re heating. red cabbage will do a couple of days in a pot pre cooked.
