I'm having a royal icing tantrum

I have bought a 500g pack of silver spoon royal icing

simple instructions: carefully measure 75ml of water, add 450g of icing sugar then beat for 5 mins. add a further teaspoon of icing sugar if it is not stiff enough.

i have done this. i have added a further 5 teaspoons of icing sugar. it has been "beating" for about 20 mins now.

it is still not f**king well stiff.

i am going to throw it out the window.

why is it not working?

why, silver spoon, why?

does anyone else have this issue?

Just add more icing sugar. Maybe by the table spoon! I've never made it in a food processor as I live in the dark ages and have to use a spoon to mix it. Xmas Grin

I've just made mine. 3 egg whites and 500g icing sugar according to Delia. Took 900g sugar to make it go stiff. Looks great now, although will probably need power tools to actually cut into the cake.

I've used the silver spoon royal icing for the past two years and have found it OK. It doesn't go terribly stiff but is fine once you spread it on the cake.I didn't add any extra icing sugar and only beat it for about 6 minutes. Don't give up and good luck!

How odd MsRinky, I've just done the Delia recipe this morning and it worked perfectly.

OP, the last time I used silver spoon royal icing it was way too stiff! I don't bother with it now, just make it with egg white etc, it's not really any more hassle.

thank you all. finally got there but had to add several tablespoons to work. it just seems to me that their measurements don't quite work

or perhaps the water round here is too soft Xmas Smile

i think i will do it properly next year with egg whites.

Is it possible that there may have been a bit of grease on any of the bowls/spoons/mixer as royal icing won't work if it comes into contact with grease I think?

I use those powdered egg whites - I use two little packets and a bit less water than it suggests to make them up. Seems to come out ok.
