could you tell me of some interesting things to do with my veggies as i usually just roast root veg and steam the green veg.

maybe an idea for using fresh herbs or a red cabbage dish...

any ideas appreciated

I am doing delias red cabbage with apple and her sprout and chestnut dish which is very quick and easy. I will also do chanterey carrots which may or may not be honey roasted depending on oven space.

We always have cauliflower cheese, cabbage cooked with onion and bacon, mashed swede and carrots, sprouts with chestnuts as well as the usual carrots, brocolli, leeks etc. Vegetables are my favourite part of the dinner ( well apart from yorkshire puddings, pigs in blankets and stuffing!)

We always have a cauliflower cheese, which I make the day before and heat up in the microwave and I add pancetta and pine nuts to the sprouts.

Always do Nigella's sprouts with pancetta and chestnuts as well as more basic carrots, mashed potato, swede mashed with tonnes of butter and pepper, cabbage, Cauliflower cheese, peas, brocolli, roast potato and parsnip.

Try just frying the sliced sprouts in olive oil and adding the chestnuts, though they are yummy with bacon. My girls complained bitterly that the school sprouts were actually boiled, why would anyone want to cook them like that? FIL will be getting his annual boiled sprouts while the rest of us tuck into yummy ones!

We're having red cabbage in mulled port (already cooked &in the freezer), sprouts with pancetta & chestnuts, roast potatoes, honey glazed chanteray carrots.

I cook the sprouts in some veg stock & brown sugar until the sprouts are tender and stock has reduced to a sticky sauce, then add the crushed chestnuts and crispy pancetta cubes to heat through. I don't normally like sprouts but these are delicious!
