Slow roasting the turkey

Have never slow roasted the turkey before but as we are going to be out for a couple of hours on Christmas day this seems like the best option. I wondered if anyone had any tips?

Would really like to know what temperature you use for slow roasting and also if you still stuff your turkey. I usually stuff mine under the skin but a couple of things I've looked at on-line suggest that this increases the bacteria when cooking it slowly.
