Boxing Day dessert?

We're having Sherry trifle on Christmas Eve and Christmas Pud / ice cream for the kids on Christmas Day. Thinking of something light-ish. Any suggestions?

I was going to suggest a baked cheesecake with fruit compote but that's not light Grin

What about a Black Forest Gateaux type cake.
I'm thinking things you can make ahead or buy and have in the fridge.

What do you have for Boxing Day dinner?

there is a lovely recipe in the current sainsburys magazine for a lemon mascarpone roulade- really light and scrummy

Lime Cheesecake

Melt 60g butter and add to 200g crushed gingernut biscuits for the base. Chill.

The filling is 2 tubs mascapone cheese, 50g icing sugar and the juice and zest of 2 limes just all mixed together. I usually take the mascapone out of fridge about 1-2 hours before I need it as it makes mixing it easier. Chill for a couple of hours before you serve it.

That's it!

Fabulously easy, light and really refreshing.
