I had a mental list of things that I wanted to make last year and didn't get around to making any of it despite buying most of the ingredients Blush.

So, this year I have been a bit better at getting things ready.

I have started the flavoured alcohol but that still needs a couple more weeks before I can bottle it.

Today, I have made lemon and lime cordial for the non-alcohol-drinkers. It has taken me ages but it tastes really good (even if I do say so myself Grin) and I now have 2 bottles ready to give!

I can tick one item off my list and maybe even move on to the next job - though that may be pushing it a bit far for me!!

It's supposed to be lemon and orange but I had bought limes by accident! Also, I used half quantities because I hadn't checked the recipe before I bought the fruit and didn't buy enough Blush. I'm not very good at being organised but the thought is there Grin!!

8-10 lemons
6-8 orange650g sugar
1.5tsp citric acid

Pare the rind finely from 1 lemon and 1 orange. Put the sugar, rind and 600ml water into a pan. Heat gently to make a syrup, then boil for 5 mins. Strain through a sieve into a measuring jug; discard the rind. Squeeze sufficient lemons and oranges to produce the same amount of juice as syrup, keeping the portions half lemon and half orange. Mix the syrup and fruit juices together in the pan and add the citric acid, stirring until the powder has dissolved.
Makes 2 litres.
I have sterilised the filled bottles in a pan of boiling water but not sure I have done it correctly!
