Making soup from the ham stock

I am going to do a ham this year - I like the look of Nigella's Festive Ham recipe. The ham is boiled in cranberry apple juice, with some cinnamon and allspice.

If I want to make soup from the liquid afterwards - can I just bung a load of lentils and a carrot in, will it taste nice? Or wierdly sweet? What else could I do?

I always do Nigella's ham in coke at Christmas from Nigella Bites and there is a recipe for 'South-Beach Black Bean Soup' to use the stock. It is lovely, but very filling, and not too sweet.
