Light brown discharge in toddler's nappy

My 3 year old son caught covid last week and from Tuesday to Friday he wasn't eating anything at all. He ended up in hospital on Friday overnight with low blood sugar (due to not eating, no other reason) and they gave him a glucose gel and the eventually orange juice.

Since we've got home he's slowly been eating more but started off just eating bread sticks. Today he's eaten as normal.

Last night he wet his nappy and the urine was dark, there was also quite a bit of chalky brown discharge in there. This has happened again this morning.

I've called 111 and they said they'd call me back but I've since had a text saying they won't so I'm hoping someone here can offer some advice?
