Baby poo way too much at once and watery

Hello :)

My baby is almost 4 months old, but this problem with poo started at him being about 2.5 months old.

So, in general, baby is breastfed only and before this he always pooped several times a day. Here is what started happening from about 2.5 months:
1.Baby now poops once every 2-3 days.
2.When he poops, it is extremely smelly (never happened before)
3.The nappy is overflowing with poo (never happened before)
4.The poo looks very watery (almost never happened before)

Some other things that has changed since he has this poo:
The gas he is passing is very smelly. This varies from day to day, but it wasn't like that before 2.5 months
Before doing his poo now, baby strains for a few minutes and his face becomes red.

I have a video of his poo, so maybe you guys can check this out and tell what do you think? Is this normal?

I live in UK and spoke with two different doctors over the phone and they say it's normal. Also, health visitor over the phone said it's normal. It's normal, because the baby is well otherwise, he doesn't have a fever and feeds well. This doesn't looks normal to me, but of course, I might be wrong. I have a lot of reasons not to trust UK doctors at this point. I didn't showed them video, as they cannot accept us because of the current situation with virus. This is happening for over a month now. We've been giving baby infacol and gripe water since he was a few weeks old and we give it to him every now and then, not too often.

Anyone else encountered this and can reassure me it's normal? Or it isn't? What can I do then, if doctors won't help?

I haven't looked at the video, only the picture but looks normal to me. All 3 of mine were breastfed, sometimes the poo would escape the nappy and go all up their back. It's messy and stinky, requiring a bath. If baby is generally happy, and feeding well I'd say it's normal. It will change again when they start on solids.
