Coffee/Tea, real milk (not powdered or UHT).
If not done already when they met you and your DS, a guided tour of the house is useful, esp location of nappies, change of clothes and bedding, bottle and preparation materials (EBM, formula, etc).
If you have Sky, the pincode for movies before the watershed is handy - if it's different to PayPerView pincode as you won't want your babysitter adding things to youe sky bill.

Purely practical worst case scenarios:

Your DCs red book left somewhere accessible - it has all the info needed for any emergency hosp admission

A torch in case if power cut (show them where the fuse box is too)

Emergency contacts written down: your mobile(s), the place you'll be and a neighbour/friend/someone reliable as backup in case you can't be contacted

I also appreciate a written reminder of 'if they wake up give milk/cuddle/pat/start the sleep CD and continue until asleep/until calm and let them self-settle'

The nice stuff:

key to wifi
biscuits - chocolate ones appreciated
possibly a pizza, depends what time they start
tea/coffee/milk
