I am planning on doing a veggie based meal tomorrow but can't think of anything to cook that's not something I feel we always have.

Was thinking veggie fingers/nuggets with sweet potato; but what other veggies? They had peas and sweetcorn today!

I'm stuck in a veggie rut and can't think!

I can only think of the safe veggies like peas, sweetcorn carrots! They will eat anything covered in breadcrumbs so I can get adventurous but I can't think!!!

Carrot sticks and Cucumber sticks with a hummus dip, or spicy (or not) tomato dip.

Are you having to have it all Veggie, or can you include Eggs, Milk, Cheese, Mycoprotein?

I have been using the quorn chicken style pieces. You could make fajitas. Buy some tortillas and stir fry the quorn.

Serve with carrot/cucumber sticks as nick suggests. Also cherry tomatoes. Or stir fry thin slivers of pepper and onion with the "chicken"

Or do pasta. Blend some veggies in a tomato-based sauce if they don't like a lot of veg. Or stir in pesto sauce and add some cooked broccoli /peas. (break the broccoli into tiny little florets and steam for just a couple of minutes)

Mine had vegetable samosas with their lunch today and loved them (one picked out the peas).

ratatouille (not sure it's speltcorrectly). we all love it, it's easy to make and is delicious with just bread and butter. i make sure it's got lots of olive oil.

was thinking ratatouile type lasagne, but as I have some breadcrumbs that need using I was hoping to include them, hence thinking veggie fingers but can't think of what veggie to out inside!

Nannynick - it's not really a dietary thing (although we do have egg allergy) so anything goes. All the children eat meat, we just try to have 1 day a week meat free.

forgot to say that when I stir fry the quorn (or indeed real chicken!) I add a bit of chinese 5 spice - really lovely and not too spicy.

Chinese style things often go down well, so stirfry veg with rice.

Mini Cornish Pasties made with Mycoprotein mince and selection of diced veg in a vegetable stock sauce (or use a condensed veg soup).

Mycoprotein mince with Tomato sauce on egg-free pasta of some type.

Rhubarb Crumble and Custard / IceCream.

If you want to use up breadcrumbs how about these veggie sausages with some mash and onion gravy. Yum!

I made a really easy fish pie yesterday that everyone other than my DD loved , I added leeks and spinach to the fish, parsley sauce and obv. potato on the top. Then served with carrots, peas and sweetcorn so there was a lot of veggies in there .....
