Advice please - food, holidays, sleeping etc!!

Am new to this my poor DD1 (now 6) had to go to full time nursery 5 days a week 10 hours a day - have now significantly cut my working hours and DD2 (now 6 months) goes to a CM one and half days a week (for the last 3 weeks so far) - she is lovely older lady local and very well recommended I like her a lot...
However I am very OCD organised type person, she is clearly laid back muddle through type, and the more questions I ask and instructions I give the more bemused she looks
So can I ask some questions here so I know where I am going with her??
First off - food - baby is still partially BF (eve/morning/nights and some day feeds when I am home) - have been weaning about 2-3 weeks now and have been sending in little pots of either home cooked food or jars + bottles (either formula or EBM) she continues to look bemused by number of bags (one change bag, one bottle bag and one food bag) no way I can do it in less - should I be sending food in or expect her to feed baby, at what stage would she provide food for baby (if ever??)...
Second - sleep - the baby is lovely placid baby UNLESS she gets overtired - last Fri she had to call H as baby was hysterical (he managed to calm her down I think it was combination of teething and being overtired) - I don't think she has dedicated area for baby to nap (on long day she is there 8-9 hours so needs at least one long nap) - I think she just lets baby nap in buggy as and when which I don't think is sufficient at this age - what do I say do I offer to provide travel cot??
Third - holidays - do I continue to pay her when she/us are away/on hols - she says she only takes 2 weeks a year and as she is reasonable and I have taken the same 2 weeks off I really don't mind but what about when we are away??? I have set up monthly standing order to pay her so would be pain to change??
Gosh I do sound neurotic how do I bring up with her without her thinking I am even more anal than she already does
And just to mention I am more than happy with her - she treats the kids like her own - has very good references - the baby seems happy going in just too tired coming out......

You don't sound neurotic at all! Its your baby you're talking about!

Firstly, with regard to food. Its up to you to decide how and what she is fed. I used to childmind and even if a parent was doing something different to what I would do, I was looking after their child and would do what they wanted, without question.

Sleep. She should have a travel cot anyway and actually some Ofsted officers, suggest not to let mindees sleep in buggies. I say some, so maybe hers doesn't think it a problem. Again, she should really be going with your wishes. I'd suggest it, in a roundabout sort of way!

holidays.Generally, you pay full pay for your holiday and no pay for hers. But again, and sorry to not be much help, each minder is different. Check your contract, it should be clear on there, what the terms are.
