do childminders charge a retainer for after school care during school holidays? I wouldn't have thought to do this. I will be collecting one child for one day a week and only intend to charge as and when because she isn't taking up any real spaces.
Is this unusual?

It's entirely up to you. I did school pickups for children who were term time only (which sounds like yours) and didn't charge for holidays. I have also done them for parents who wanted me to be available full days in the holidays, so I charged them for all the holidays. I have also heard of CMs who provide the same hours in the holidays and just charge for them (ie 2, or 3 hrs per day). If you are available and want to charge, then you can add that into your contracts and discuss it with parents.
