CM's - please give me some ideas on easy dinner meals

Not the most riveting topic but some ideas would be nice.

I charge slightly higher fees than most CM's in my area but I also provide all meals and snacks. I give them their main meal at lunch time so dinner time is usually something hot or cold. I think I need to add more variety but I need the meals to be quick and easy as I find 4pm-6pm the most chaotic time of the day.

I currently do...
Beans on toast/crumpets
Scrambled eggs on toast/crumpets
Various omelettes
Toasties
These are usually served with fruit and yoghurt.

Mindees are mostly toddlers (some a bit fussy) (9, 20,12,22 months)

Fajitas / Wraps
Mini pizzas that they could 'help' make
Pitta bread, hummus and crudités
Would they manage soup with bread to dip in? Could be quite messy...
Pasta with bits and bobs
Various tarts/quiche - pastry base with toppings

My older ones all have hot lunch at school so quite enjoy a picnic tea. Veg sticks,Mini sausages, scotch eggs, triangle sandwiches, breadsticks, cherry toms, cubes of cheese, etc

pasta and bol sauce (have bol sauce made and just warm it up)
homemade soup
fishfingers, chips and peas
cottage pie (again pre-made and warm up)

i generally make big the night before and have a second dinner (ie cottage pie) made for the day after

Fishfingers with veg steambag

I think I'm feeding 5 extra people when making family meals batch cook and put leftovers into toddler size portions so I can grab something out of the freezer and microwave.

Sausages with veg steambags
Homemade burgers with sweetcorn and sweet potato wedges
Cheesy pancakes (pancakes with grated cheese and grated mushrooms in them)

Pasta with pesto sauce - garlic or cheesey french bread
Pasta salad next day with lots of 'bits on a plate ' - ie anything in the fridge cut up bite size
Humus with crudités -
Rice with lean mince/onions - anything bit sloppy
next day rice salad with bits on plate
The new quorn sausages are surprisingly nice and great cut up cold with some tomato (home made of course) sauce and veg for dipping

What about slow cooker stuff? Chilli etc. Then you virtually have to do nothing at that time except put it into bowls.
