Two nights camping - what (easy) meals?

for two families (two kids in each)

BBQ one night and then..... Suggestions?

We bought 4 chicken breasts, marinaded them in my home recipe marinade and then froze them. We took them out of the freezer and put them in the cool bag to defrost over the first day and then cooked on night two with rice and tortillas.

There is always tinned stuff and packet meals otherwise.

We camped for a week with three children and relied on beans and toast once and packet pasta on a couple of occasions.

Also took tinned tuna and made tuna pasta with French bread and salad.

I would cook a pot of something beforehand then have it with potaotes or cous cous or rice. Cut down on the cooking on site.

pasta with jar of tomato and marscepone sauce - add ham/black olives/peppers whatever if you want. Easy peasy, minimum prep and washing up.

First night we did ready made pasta, sauce and salad cos once we got the tent up and organised cannot be arsed faffing around.

Next day we did BBQ.

We just take 4 plates/cups/cutlery sets etc.
Tin opener
Bottle opener
Wooden spoon
Sharp knife
We take a tray, really handy for chopping stuff up on, cutting bread etc, making sarnies etc.

i'm just back from 1st family camping trip and really wished i'd taken a washing up bowl. food wise we had pasta and ready made sauce or cous cous done with dried mushrooms. For snacks had loads of oatcakes with cheese, advocados, hummous.

Oh yes, deffo kettle and washing up bowl and sponge/washing up liquid and tea towel and all those sorts of things. Remember matches/lighter!

we just had pots but i will take a kettle next time. I had those big plastic therma mug things that you see commuters cluthching in the mornings - was pleased with them. Also, take liquid soap for handwashing (not hard like i did - a pain, especially as we had no soapdish!). I also took some of that alcohol solution for hand cleansing that dries in itself.

steak sarnies? Done in baguettes with thin slices of veg (peppers, courgettes etc), corn on the cob etc. Yum.

Pans & frying pan (essential for bacon imo)
lighter

Plates / bowls / mugs / glasses
Sharp knife / corkscrew / peeler
Knives / forks / spoons / teaspoons & plastic!
Wooden spoon / Washing up bowl / Dishcloth / tea towel / Washing up liquid
Kitchen roll / tissues
Rubbish bags
Sandwich bags & clips
Thermos flask

Pasta carbonara is a good one for camping as it doesn't need a second ring. Actually though, if you're cooking for 8 on one ring you'll need a v big pan.

We like those tinned sausages and beans for camping - they come into the 'wouldn't eat them any other time' category
