Camping recipes would anyone like to share???

Apart from burgars, sausages and bacon I really struggled with cooking ideas and missed having an oven

We usually have loads of tinned stuff that can just shove in one or two pans and doesn't take ages to cook just needs heating through
Corned beef hash - one pan, tin of corned beef,tin of beans, tin of potatoes
Tinned curry (promise not as bad as sounds M&S ones are best) with micro rice(cooked in pan with just a splash of water)
Tinned sweet and sour chicken (again surprisingly palatable!) and micro rice
Tinned stew, plus tinned potatoes and tin of carrots or peas to fill it out
Quick boil pasta and dolmio stir in sauce
often have Rice pudding for afters or angel delight (take uht milk)

I got back from camping yesterday in Shropshire and we had pancakes and chocolatey bananas one day!

Sorry I know that's not a meal but my dc loved it!

We had a nice stir fry one day and wraps.......

we cook a lot of fish on an Ikea griddle. marinade in some lemon and garlic and add some boiled new potatoes, lovely. I use a lot of spice mixes too so you can do jerk chicken the same way.

marks and spencer tinned curry and tinned chilli are surprisingly good. Also fresh pasta with a jar of nice sauce and some parmesan. We've also done cheats sausage. casserole - pack of sausages, jar of sausage casserole sauce (m&s again) and a couple of tins of potatoes. Puddings so far have been tinned rice pud and golden syrup cake and custard.

Couscous, with more or less anything.

Ah I am always a bit at tinned food didn't even think of trying m&s good idea!!! I just found that if we wanted a good meal we had to eat in some where unless we had cold meats and salad and potatoes. They had fresh herbs where we were staying so really wanted to get into the camping spirit and cook from fresh.

Hi we cook

BBQ with sautéed potatoes/garlic/onion and salad
Spag bol and grill garlic bread
Chicken noodle stir fry with mushrooms, peppers, water chestnuts in how sin sauce
Chicken and choritzo risotto withdrew salad and toasted ciabatta
Omelette with Herat frankfurters and cheese
Fry up
Chilli n rice
Sauasge pasta with cheese crust and vegetables

With the exception of pasta, rice and potatoes this is all cooked as a one pot dish on the Cadac Skottle and for seven of us as we go with friends.

We camped at the weekend and had pasta Bolognese.

Put a bit of mince in the bottom of the pan and add onions and peppers. When onions and peppers brown add the rest of the meat. Put lid on to keep heat in. Add tin of tomatoes or a cheat Bolognese jar. Other pan to cook fresh pasta (or dried but takes longer). Dried parmesan. Best to use an alternative to spaghetti as that is fiddly.

We usually have bbq fish. In foil. ASDA do free sauces or crumbs if you buy from their instore fishmonger and also give you a free foil tray if you ask.

onions and corn on cob are better cooked in their skins. They burn but it keeps the insides moist. Peppers softened on the bbq are a good veg, as are carrots on a medium heat.

Some on-pot recipes are also good if you have a big pot or are cooking on an open fire and not in a rush. You just bung all the ingredients (i.e. stew) in a pot, bury some jackets round the edge and then open the wine, pour a bit in then drink the rest.

You can make your own bread buy adding a bit of water to flour, squeezing into a small ball then squishing flat (pretty thingly) before dry frying. You can use to dip into hummus, put jam on, spread with tomato puree, grated cheese and salami to make mini-pizzas!?

Always dry fry toast too. Don't bother with grilling.

I like doing chikcen skewers using chicken breast, cook them over our camping stove on a flat griddle and then serve with shop bought jar of satay dipping sauce and wraps and salad.

When we camp in France we always buy tins of duck cassoulet and have that with fresh bread. It is delicious.

Veggie chillie is alos lovely with nachos, guacamole and sour cream.

Orange cakes (if you have a BBQ or campfire)

2 oranges
1 egg
2oz self raising flour and 2oz sugar (in a little Tupperware or sandwich bag)
Chocolate drops

Carefully cut top off each orange, as if you were about to peel it, but don't peel the rest. Use the sharp knife to loosen the inside, then scoop it out with a teaspoon and eat it. Beat up the egg and pour half into each orange. Spoon in the flour sugar mixture and stir, adding more until the orange is 1/2 - 2/3 filled. Add choc drops. Put the orange top back on like a lid. Wrap each orange tightly in tinfoil, gathering the corners at the top and twisting them into a handle. Place in very hot embers for 10mins or so.

Eat straight out of the orange.

Oooooo orange cake sounds ace!

We usually have things like stir fry, fajitas, corn beef hash, Spanish omelette, butterbean & chorizo stew, (gorgeous, google it and click on the tesco recipe that comes up), spag bol (cooked at home and frozen for the journey), pasta & sauce... Anything you could cook fairly quickly on the hob at home really!

That fresh stuffed pasta with sauce is a good and only take 5 ish mins of boiling.

Our favourite is chicken or lamb cubed, cooked on skewers on the fire or bbq. (soak bamboo skewers in water before placing on fier so they don't burn) Wrap cooked meat in a tortilla wrap with salad leaves, chilli sauce, yoghurt or whatever takes your fancy! So easy and very low on washing up!

Otherwise anything you can make in one pot can be made easily. we sometimes do a lamb hotpot.

Also homemade mini burgers, add plenty of spices and herbs so it not just boring burgers. Mix the meat, onions etc at home and bring in a tupperware boc then shape the patties and chuck them on the grill. Serve in pitta with lots of lovely salad. Yum.

Baked bananas (put a cut in an unpeeled banana lengthways and wedge in some chocolate. Wrap tightly in foil and put in the embers of BBQ for 10 mins)

Oh yes. you can slice a sausage many times across, but not completely breaking it in two, then feed onto a long stick. In between all of the slits place a piece of onion or pepper and then get the kids to hold the whole thing over the fire.

We do the orange campfire cakes too but use packet brownie mix.

Another goodie to add is blueberry pancakes for breakfast. Get one of the ready made pancake mixes in a bottle and add water /milk as per instructions. Shake and add to a pan then sprinkle blueberries over until cooked. Serve with maple syrup.

Also paella. Yum :)

Orange cakes using carrot cake mix with some blueberries in the bottom of the orange. Yummy.
Pizza using shop bought base, add toppings then fold in half calzone style and wrap in foil. Cook at edge of fire.

Don't you get plagued by wasps with the orange thing?

Wasps go to bed at night . We only do campfires in the evening.

Like the calzone idea! What make of pizza base do you use? I've only ever come across stiff, almost biscuity ones, that would simply break if you tried to fold them. Or would naans/wraps do?
