roast dinners in the Cobb

So i've tried twice with roasts in the Cobb (once chicken and once gammon) and on both occasions the veg was very undercooked despite putting in for a lot longer than I would usually. I tend to do the potatoes in the moat which works well and then veg wrapped in foil next to the meat. Last time I did foil parcels of carrots, broccoli and Courgettes and put then in for 30 mins and they were still almost raw.

Can I have your top tips for roasts in the Cobb as I love the idea of being able to knock up a proper roost dinner while camping!

I've twice roasted chicken and veg on my cobb. First time I used the cobb cobblestone as the fuel. I found that the veg didn't cook too well in the moat or on the rack around the chicken. Second time I followed the advice of ahrgard on youtube

but used briquettes instead of the cobblestone. Found the veg cooked much better and were ready at the same time as the chicken. Hope this helps!
