Quick easy up to 600 calorie meal ideas

I find breakfast (if I have it) and lunches easy to deal with.

I cook a standard evening meal for the rest of the family and either have a smaller/adapted portion of what they have with extra veg, but if they are having something like pizza/fish and chips etc then I'd rather use my calories wisely than have a tiny bit of something calorie heavy.

I feel stuck in a rut with things that involve eggs. I'd like some ideas for things that I can keep in the freezer/ store cupboard (tight budget) that I can have on nights when I eat separately. There is always some form of fresh/frozen veg to have. I usually have between 400-600 calories left for evening meal.

Don't mind a frozen ready meal once in a while but they aren't great are they Grin

Have a look at the hairy dieters cookbook - they have meals arranged by calorie content and have loads of 600 cal ones.

Thanks I will have a look, I do enjoy cooking from scratch when I have the time.

I work during the week and have 3dc so I was hoping for some quick easy throw together kind of ideas rather than more complicated recipes iyswim.

Pinch of nom website or books. They are mostly under 400kcals so I add a bit more to take them up to 500-600 which suits me for tea.

Yeh I have a few recipes from pinch of nom to try, Cajun dirty rice, shakshuka and diet cola chicken, these would feed the whole family.

Beans on toast is a good one, also thought I could have a jacket potato too, I usually have poached/scrambled egg on toast or a veggi omelette.

I get these little veg packs for the freezer with grains and use with meals, e.g. have fish and veg and one of those, DC might have fish also (or fish fingers) mash and veg...just to adapt the meals really. or e.g. quorum sausage, could have sweet potato mash and veg...that kind of thing
