Not eating enough calories some days

I am calorie counting and I've noticed that some days I am not getting enough. I am wanting to lose weight and I've lost 10kg but I am worried that I am being too restrictive. Can anyone give me a number to aim too. Some days I am under 1000 and the highest I get to is 1600. This past week I've been having stomach issues. It could be TOTM or IBS. I am veggie/vegan.

Hard to say without knowing how tall you are, what you weigh or what your daily activity levels are like. I'd say 1600 sounds okay for a reasonably inactive person (ie office job, not much walking). Under 1000 sounds too low. I'd say minimum 1200, but as I said this is without knowing and additional info.

I am 114kg and 5ft7. I do 30+ minutes exercise daily and I do 8000-10000 steps a day.

Go to iifym.com and use their calculator to work out you TDEE basically this is the amount you need to eat if you want to maintain your current weight so eating below that will help wait loss. Mines is 1948 so I stick to 1300/1400 calories per day. Hope this helps.
