How can I get my three-year-old to break fussy eating

My three year old is an extremely fussy eater and it makes doing his dinner very frustrating. He won’t eat ANYTHING with a sauce, he won’t eat pasta, he won’t eat eggs. Other than a roast or pizza there is not one single meal I can cook for us as a family really. He is an absolute dream when it comes to fruit and veg and loves on the stuff, but I long to be able to do him a quick omelette or pasta dish. I bribed him with an ice pole today to try and get him
To eat a bit of pasta, he initially backed away screaming as though it was a bush tucker trial but the power of sugar won out and he ate a single bit, he agreed he liked it the is uggested it for dinner and he went mad!
