my DD is 4 months old
Her name is K.... Ellie V..... surname

have really had trouble with Ellie from the start and it was DH's choice not mine. I feel that, rightly or wrongly, it is not a 'real' name but is a nn, plus not to my taste

Ideally would like to delete it altogether and use Hope instead for personal and family reasons. DH has caved n to my demands (grin)

Do you know if i can do this - do i just need to go back to the registry office and re regster as K..... Hope V.... ( surname )

Yes.
Ring the registry office. In my case they sent me a small form which I filled in. I then made an appointment and they changed the name on the register and issued a new birth certificate.

There's a box at the bottom of the birth certificate, box 17 for change of name. We added a middle name, my ds's original name is still at the top of the certificate.

It is very easily done.

You are right: Ellie is a nickname (it's short for Elephant).
