I thinking of calling our little boy when he arrives Connor. Our surname is Earle-Mitchell.

I cant come up with a good name to fit in between Connor Earle-Mitchell

Those Rs really run into eachother!!
Conur url mitchell. People will hear ur ur.

if that doesn't bother you, then I'd put a long traditional english name in the middle, like Dominic.

Conor Dominic Earle-Mitchell.

Connor Michael Earle-Mitchell would be nice as Michael is my dads names
or
Connor Richard Earle-Mitchell after DH dad,
but not sure if i like either that much. Opinions on these??

Both are nice, especially with the family connections. Michael and Mitchell are similar in sound, though. And the ITCH sound is repeated in Richard and Mitchell. But since these are middle names, not such an issue.
