I know an Eme pronounced Emmy

Also know a baby Emmeline. Everyone, bar none, mishears it as Emily the first time.

I would spell it Emmy or Emmie. Spellt as Emme it sounds like Em-meh to me...

People will think it's a typo for Emma. Why make life difficult for your child? Call her Emily or Emmeline and shorten it to Emmy. But no-one, and I mean no-one will know that Emme should be pronounces Emmy. Why should they? In English Emme woould be pronounced Emm.

When I saw it I thought, Emmy or Emm??

One good rule wrt names is: Is it immediately obvious how you say it? In this case no.
