Kate is short for Catherine.
Jemima makes me think of playschool.
I'd go Claudia Juliet.

Claudia Juliet by quite some way. Kate is much more dull as a middle name by comparison. Jemima is a very racially charged name in the USA, and while I wouldn’t make it my only factor, all things being equal I’d pick the name which works better internationally.

I love the sound of both names but I wouldn’t pick either.
Jemima is almost unusable in the USA and therefore doesn’t travel well outside the UK. Look up Aunt Jemima and racial stereotyping.
Claudia is beautiful but I can’t get past the meaning ‘blind’. The second names you have chosen Kate and Juliet are gorgeous though!

Claudia does not mean blind. It’s highly doubtful that it means lame too, not given the complexity and antiquity of the origins of the name. I do wish people would keep their daft, ignorant cod Latin to themselves. And to condemn a name out of error and ignorance, really, it’s laughable.

Claudia Juliet is more elegant. Jemima Kate is a tiny bit dumpy.

Claudia is a lovely elegant name

Jemima is cute but undeniably a bit twee (like Tabitha) - I wouldn’t especially want to be called it as an adult

Claudia is automatically pronounced Clawdia in the UK, unless you specifically say it’s Cloudia, so assuming that’s what you want it will be fine.
