Not my taste at all but there’s a lot more freedom for out-there middle names than first names, probably because they’re used so much less and are easier for the child to drop if they choose to

And it’s better than Bleu which I’ve also seen mentioned on here!

It's not my taste and I do think of the toilet cleaner Bloo, and blue also means porn, as in a blue movie, as well as sad. How about other blue words? Azzurra or Celeste both can mean blue in Italian. Or what about blue things? Sky? Iris? Cornflower?

I like some of Daisy's suggestions above but think Blue is ok^ .... better than Boo or Bow (both hyphenated middle names of girls I know 🙄)

There is an actress in Endeavour called Dakota Blue. Hasn't done her any harm, as they say.

I know a Blue in his early 20's, so have positive connotations with the name.

If their eyes stay blue then yes, you could do a Scarlet O'Hara. ("Bonnie blue" Butler) eugenie was a perfectly good name

The guy I knew with Blue for a middle name had a pair of hippies for parents. He's in his 40s, so nowt to do with Beyonce.

Have you also considered Yellow, Green, Orange or Purple.
All nice colours (but not really names in my opinion).
However, it's a middle name so I expect won't often be used anyway.
