Does it have to be a name ending in Lynn? You could have Lynnette/Linnet. Ok I realise Linnet is pronounced slightly differently, but it's still a tribute to your MIL I think.

Oh, yes Evelynn is nice. Think Evie-Lynn is a bit complicated for a middle name. Daisy is just a name, who cares what month she was born in?
