Type 1 diabetes and coeliac disease

Friend has had type 1 diabetes for years, now diagnosed coeliac as well. She's been referred to a dietician but the waiting list is 6 months. Meanwhile she is really struggling with what she can eat and she is losing weight when she is already thin. She doesn't have access to the internet. Does anyone have any ideas? She really doesn't like the gluten free bread but waitrose gluten free bread is apparently the best of a bad lot.

We have this in my family. I’m told that you can make decent gf bread in a bread maker, though I’ve not tried. It’s relatively easy to do a gf diet if you’re cooking from scratch. Much more difficult if buying prepared products. Hard if you’re time poor. My sympathies to your friend.

When dc was first diagnosed I found them really helpful and spoke to an actual dietian.
Best thing to do is look at naturally gluten free products because a lot of gf products have extra sugar in.
Dc likes Tesco seeded bread however it is trial and error, and tends to have a gf bread roll more than sliced bread.
Some companies will send out free samples so you can try different things, so worth signing up for a few newsletters etc.
