Coeliac daughter needs to gain weight

Looking to try to put a bit of weight on my dd10 who's coeliac. She was diagnosed years ago but is still the smallest and quite light- consultant asked us to try to 'bulk' her up.
She eats most things but not milk and pieces of red meat although will eat spag bol, lasagne etc.

Anyone had experience of this? Any recipes help?

Usual day-
Waffles & cheese, ham abd cheese toasty or egg on toast fir breakfast
Takes pepperami or fruit for snack.
Lunch- usually pasta bake, left overs, occasionally the usual sandwich. Then crisps, fruit, cake/ biscuit.
Snack- tortilla and dips/ fruit,
Dinners- loves pasta dishes, eats stitfry, chicken fried rice, roast , breaded chicken veg and wedges.
Often has a pudding- biscuit, fruit, mince pie!

Thanks @SunshineYay , I’ll try those shakes. Makes sense about her feeling bloated as her stomach is so small.

Those shakes are brilliant when you don't feel like you can eat much. Pour them into a tall glass if you think she'll read the nutrition label and not want to drink them due to the calories.

Dc2 was referred to a dietitian to help increase weight. Was recommended to have 5 meals/snacks a day plus a very milky full fat drink (eg hot chocolate with cream and marshmallows). Add lots of fats to meals. It feels exhausting as its always thinking about food so have a snack cupboard where twice a day she chooses (lessens my thinking). She alternates vitamins so has calcium one day and a multivitamin the next (calcium is mixed with other vitamins so to prevent overdose this is what was advised).
Is ghe coeliac fully controlled? If not have you looked at refractory coeliac disease? Are the bowels fully healed? Is absorption still an issue?

@Lifechoicesinhindsight thank you great advice, i did her a hot chocolate last night so will keep that up- my ds is also loving it!!
I think coeliacs is under control (although she was badly glutened in July on a trip) no idea if bowel healed, she saw consultant for bloods in May and all was fine, just wanted her to put more weight on.
Can I ask what calcium and vitamins you give your dc please?

Is the OP still around? Did your daughter ever gain weight? My DS is 10yrs old and was diagnosed with coeliac 7 months ago. He's been on weight gain shakes for 2 months and we just cannot get the weight up. It's soul destroying.

Milk is obviously good. Would she do hot chocolate? I'm trying to gain weight and am finding this a good way to get extra calories in. Peanuts are my other go to.
