Don't know for sure but I'd say a bread knife or something similar.

I used to use scissors when I was working as a florist but that was 18 years ago so technology may have advanced since then

thanks - bread knife worked a treat! Also used pastry cutter to get smaller shape!

a little scalpel type knife

or this but they can snap easily and you need to keep track of the tiny bits
