Quick question - will any hollow rubber tubing do for holding stitches?

There is so much on eBay/Amazon etc and I don’t know if it’s worth buying the pre-cut packaged stuff?

Yes, as long as you have some way of securing the end.
You can even use thread/wool to hold stitches.
If you have a set of interchangable needles, use a spare cord with stoppers.
