Absolutely new to embroidery and hoping one of you helpful MNetters can advise !
I've bought a hexagon sampler set and am just reading through the instructions.

They talk about using 2 threads from the skein of thread to start off.
You thread the needle with them both but I cannot for life of me work out whether you tie a knot at the end of each individual thread or tie both together (to stop the thread pulling through the fabric) like if you were hemming something.I
Appreciate this is probably a daft question but one of the reasons I've stayed clear of craft stuff is because I struggle with written instructions🙄...

I tie them together.

You tie them together, just the one knot.
