Some advice re sewing together knitted toys

Could I pick your brians re knitted toys?

I am fine with the knitting but have never been the best at sewing. These will probably sound like daft questions but I want to improve the finish of my work. so here goes;

1. I have been sewing the pieces together using a wool needle and wool, is this the best and neatest way?

2. Is there a specific stitch that I should be using?

3. Has anyone got any advice or tips on how I can make my stitching look more professional and less like a small child did it?

I find the sewing up of knitted toys the most tedious job of all, so I do it as I go along.
Stocking stitch knitting I do on the wrong side with a little backstitch picking up two rows of knitting at the time, that makes them nice and even. Rib and moss stitch I do with an overhand stitch. It's the attaching of arms, legs, head that gets me every time.

I certainly use a wool needle and the same colour wool that I have knitted with

Thanks it's definitely the worst bit of the whole process for me and the worst thing is that it can totally alter how the toy looks if you are not very careful with it.

Nope my oldest ds is 3 in October, next ds is 2 in October and my youngest ds is 5 months old.
