Trying to go back to knitting

I used to knit a long time ago! I feel inspired to knit something but it has to be something lovely but also simple. A jumper would be great, something slouchy with a cowl or boat neck, or a blanket or cowl.
If anyone has knitted something they found relatively easy and looks great, could you point me in the right direction? I don't much like circular needles or anything too complicated in terms of a pattern or I get so stressed I will give up.

Not quite a cowl but the Clapotis scarf is very satisfying to make, especially at the end when you drop the stitches and it transforms into something else entirely! www.ravelry.com/patterns/library/clapotis
