I've made crochet ones with Stylecraft dk. Washes well and is soft. For a bit of luxury I would prob use Debbie Bliss baby cashminio (sp?)

It's amazing, you can filter on about anything you can think of - yarn weight, yardage, type of stitches, crochet or knitting.

For wrists you probably want something soft and not a rustic wool that could irritate. I really like Drops wool, it's affordable and has a good range of colours.

They look nice :) I used a 4mm hook with my stylecraftdk. I just did a rectangle and then joined it together leaving a hole for my thumb. so I do get cold thumbs! Do it tighter than you expect cos it loosens off a bit.

I bet you could easily slip stitch a thumb cover around the gap?

Alpaca. I made a pair of wristwarmers by adapting Cookie A's sock pattern "pomatomus" on Ravelry and they are soooo cosy.
