Roman blinds - novice here!

I have decided I want to make some roman blinds, have read up on it and it doesnt look too difficult.

I have some old Laura Ashley curtains in a striped material which is joined in the middle - will it be ok to make the blind out of that or will the seam cause complications/look crap?

As long as you are really careful to get the rods straight, it will be fine.

Are the stripes horizontal or vertical?

If you are not confident of your ability to get lines 100% straight, use something with a non-geometric pattern (e.g. floral)

I don't think the join will cause complications (especially if you're lining the blind). But I would try pressing the fabric and hanging it flat to see how obvious the seam is. It might look a bit odd if you can tell there's a join, but if it blends in well with the stripes you might get away with it. Alternatively could you take it apart and make 2 blinds to hang next to each other?
