Someone please explain to me how a pillow case goes together...

I can't get my head round the flap bit that goes over the pillow for some reason (simple things often baffle the bejesus outa me )

Well....imagine you have a square of fabric...and a rectangle of fabric. Two separate pieces.

You lay them on top of one another...and the rectangle piece has a flap sticking out...because it's larger than the square.

So...BEFORE you lay them together, you fold that bit of extra on the rectangle...the amount that sticks out...you fold it down.... Then lay the square on top....sew all that together and you've got a pillowcase with a flap.

Aaaah, so I need to fold the flap so it's face down, then lay the smaller piece on top?

I need to hem the top edge before I sew the other three sides then, don't I?

Yes. put it all together before you sew it all...check it out...double check which bits to hem and off you go. Took me ages to work out too.
